From crispy air fryer baked potatoes to cheesy scalloped potatoes, these recipes are versatile and delicious. Here are my go-to recipes for comforting, delightful potato dishes.

1. Air Fryer Loaded Potatoes

There’s nothing quite like a loaded baked potato—crispy skin, fluffy insides, and all the toppings your heart desires. But what if I told you that you could achieve this perfection in your air fryer? Yes, it’s true! These Air Fryer Loaded Baked Potatoes are everything you love about the classic dish, with a fraction of the cooking time and all the deliciousness. Plus, they’re ridiculously easy to make. Let’s dive in!

Before we get into the recipe, let me tell you a little story. My husband used to hate russet potatoes. He said his mom would make him eat them with only butter, and he found them bland and boring. But when I introduced him to the awesomeness of loaded baked potatoes with all the fixings, he went crazy over them. Now, he wants them almost every night! The addition of cream cheese instead of the usual sour cream makes them even more delicious. The explosion of flavors in your mouth is just amazing!

Ingredients:

  • 4 medium russet potatoes
  • Canned spray butter
  • 1 cup shredded cheddar cheese
  • 4 ounces cream cheese
  • 1/2 cup bacon bits
  • 2 green onions, chopped
  • Fresh chives, chopped (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry.
  3. Poke each potato several times with a fork to prevent them from exploding while cooking.
  4. Spray the potatoes with canned spray butter and sprinkle with salt and pepper.
  5. Place the potatoes in the air fryer basket, making sure they are not touching.
  6. Cook for 35-45 minutes, turning them halfway through, until the potatoes are crispy on the outside and tender inside. If the potatoes are huge you may need to cook them for 1 hour!
  7. Once cooked, carefully cut a slit down the center of each potato and fluff the insides with a fork.
  8. Add a dollop of cream cheese, a generous sprinkle of shredded cheddar cheese, and a handful of bacon bits to each potato.
  9. Top with chopped green onions and fresh chives.
  10. Serve hot and enjoy!

2. Air Fryer Breakfast Potatoes

These air fryer breakfast potatoes, especially with preferred russet potatoes, are a delicious and easy way to start your day. The Dijon mustard adds a unique flavor twist, and the added onion, green pepper, and garlic will have everyone asking for your secret ingredient!

Ingredients

Potatoes:

  • 2 medium russet potatoes, cut into square chunks (you can make more if you want)

Seasoning:

  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard (the secret ingredient!)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Your favorite seasoning blend

Additional Ingredients for Extra Flavor:

  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 spoonful of chopped garlic or jarred garlic

Instructions

  1. Prepare the Potatoes:
    • Wash and cut the russet potatoes into square chunks. Try to keep the pieces similar in size for even cooking.
  2. Mix the Seasoning:
    • In a large bowl, add the potato chunks. Then add the olive oil, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Add any additional seasoning if you like.
    • For more awesome taste, add the chopped onion, green pepper, and a spoonful of chopped garlic or jarred garlic.
    • Toss everything together until the potatoes are evenly coated with the seasoning mixture.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for super crispy potatoes or 390°F (200°C) for a medium crisp.
  4. Cook the Potatoes:
    • Arrange the seasoned potato chunks in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding if you’re cooking more than 2.
    • Air fry at 400°F (200°C) for 20 minutes, shaking the basket halfway through for even cooking.
    • If you prefer a medium crisp, air fry at 390°F (200°C) for 20 minutes, again shaking the basket halfway through.
  5. Serve:
    • Once the potatoes are golden brown and crispy, transfer them to a serving dish garnish with parsley, green onions or chives. Enjoy your perfectly seasoned, crispy breakfast potatoes!

3. Air Fryer Scalloped Potatoes

These air fryer scalloped potatoes are layered with russet potatoes and drenched in a creamy, cheesy sauce. The optional onion adds an extra layer of flavor, making this dish the perfect side for any meal.

Ingredients

  • 4 medium russet potatoes, thinly sliced (use a mandolin for uniform slices)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour (gluten-free optional)
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper (to taste)
  • 1 cup heavy whipping cream (room temperature)
  • 1 cup milk (room temperature) (also milk is optional btw I’ve made these with just double the heavy cream and they came out just fine. Probably more creamier!)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded yellow cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 small onion, thinly sliced (optional)

Instructions

  1. Prepare the Potatoes:
    • Wash and thinly slice the russet potatoes using a mandolin for perfectly uniform slices. Trust me, it’s worth the gadget!
  2. Make the Sauce:
    • In a saucepan over medium heat, melt the butter. Add the flour and cook for about a minute, stirring constantly to prevent burning.
    • Stir in the salt and pepper.
    • Gradually add the heavy whipping cream (and milk, if using), continuing to stir until the mixture thickens. Pro tip: using room temperature milk and cream will cut down your stirring time!
    • Slowly add the Parmesan, cheddar, and mozzarella cheeses, stirring until the mixture is smooth and deliciously cheesy.
  3. Assemble the Dish:
    • In an air fryer-safe dish, lay down a layer of potato slices, overlapping them like lasagna noodles. And by “like lasagna,” I mean seriously, layer them up! If you don’t, some poor potatoes will be missing out on the cheesy goodness.
    • Spoon some of the cheese sauce over the potatoes.
    • If you’re feeling adventurous and using onion, add a layer of thinly sliced onions.
    • Repeat the layers, ensuring each one gets a generous amount of cheese sauce. Remember, every layer deserves its share of cheesy love.
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 330°F (165°C).
  5. Cook the Potatoes:
    • Cover the dish with aluminum foil and place it in the air fryer.
    • Air fry at 330°F (165°C) for 30 minutes.
    • Remove the foil and air fry for an additional 20 minutes, or until the potatoes are tender and the top is golden and crispy.
  6. Serve:
    • Carefully remove the dish from the air fryer. Let it sit for a few minutes before serving.
    • Enjoy your rich, creamy, and super cheesy air fryer scalloped potatoes!

For more awesomeness you can top these with fresh bacon bits and chives!
