kcal per servingThis hearty Cobb Salad features tender chicken breast, creamy avocado, crispy bacon, hard-boiled eggs, and fresh tomatoes all tossed in a bed of your choice of greens, and topped with crumbled blue cheese. Perfectly paired with blue cheese dressing, this salad is a satisfying meal on its own.
Ingredients
2 chicken breast, cooked and chopped (or use canned chicken, rotisserie chicken, or leftover turkey)
4 hard-boiled eggs, peeled and chopped
2 avocadoes, peeled and chopped
1 cup bacon, cooked and chopped (or use soft bacon bits)
2 tomatoes, chopped or 1/2 cup cherry tomatoes, halved
1 cucumber peeled and chopped in slices
1/2 cup of croutons (gluten free if preferred)
Blue cheese dressing to your taste
1/3 cup of sharp cheddar for topping
1/3 cup of crumbled blue cheese
Directions
In a large bowl, choose your salad base: romaine, lettuce, spring mix, kale, or spinach.
Add the chopped hard-boiled eggs, avocado, bacon, tomatoes, and cucumber . Mix well.
Add the chicken to the salad base.
Top with blue cheese dressing crumbled blue cheese, croutons and cheddar.
Serve immediately or chill for later. Enjoy!
