Ingredients
1 cup pepperoni slices
1 cup mozzarella cheese balls (bocconcini)
1/2 cup black olives, sliced
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 cup Parmesan croutons
1/4 cup grated Parmesan cheese
Romaine lettuce or any lettuce or greens mix of your choice. Spinach, kale iceberg or iceberg lettuce
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Directions
In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, dried basil, salt, and black pepper until well combined. Set aside.
In a large salad bowl, add the romaine lettuce or any greens mix you have.
