1 frozen pie crust (use a gluten-free crust if needed)
4 eggs
1 cup heavy whipping cream
1 cup mozzarella cheese, shredded
2 small sweet bell peppers, diced
3 cups fresh spinach, chopped
½ small shallot, chopped
½ cup fresh parsley, chopped (reserve some for topping)
¼ cup Parmesan cheese, grated. For topping
½ tablespoon onion powder
½ tablespoon garlic powder
½ tablespoon paprika
Salt and pepper, to taste
Optional: 1 cup kielbasa-style sausage, sliced
Directions
Preheat:
- Air Fryer: Preheat to 390°F (200°C).
- Oven: Preheat to 375°F (190°C).
Prepare Pie Crust: Follow the package instructions for pre-baking the frozen pie crust. Generally, this involves pricking the crust with a fork and baking for about 10 minutes.
Mix the Filling: In a large bowl, whisk together the eggs and heavy whipping cream until well combined. Stir in the mozzarella, cheddar, diced sweet bell peppers, chopped spinach, chopped shallot, half of the parsley, onion powder, garlic powder, and paprika. Add salt and pepper to taste. If using kielbasa-style sausage, mix it into the filling.
Combine and Fill: Pour the filling into the pre-baked pie crust, spreading it evenly.
Bake:
- Air Fryer: Place the quiche in the air fryer basket and cook at 390°F (200°C) for 35 minutes, or until the quiche is set and lightly golden on top. Note that cooking times may vary depending on the air fryer model.
- Oven: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted into the center should come out clean.
- Top and Serve: Remove the quiche and sprinkle the grated Parmesan cheese and reserved parsley on top. Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature.
