kcalYou can use canned chicken for convenience, but I prefer the richer flavor of rotisserie chicken. Be sure to chop the rotisserie chicken well to ensure a balanced flavor in every bite. This versatile salad can be enjoyed on its own, as a sandwich filling, or paired with crackers for a delightful snack.
Ingredients
1 can of chicken, drained (or use cold cooked chicken breast, rotisserie chicken, or leftover turkey)
1 apple, cored and cut into pieces
1/2 cup dried cranberries
1/2 cup of mayonnaise
1/4 cup pecans, chopped
1/2 cup celery chopped
1/4 cup green onion, chopped
1 teaspoon Dijon mustard
1 teaspoon brown sugar
1/2 teaspoon garlic powder
Salad mix options: lettuce, spring mix, kale, or spinach
1/2 cup curly parsley, chopped
Directions
In a large bowl, mix the drained chopped chicken with mayonnaise, Dijon mustard, and brown sugar.
Add the apple pieces, dried cranberries, chopped pecans, parsley, and green onion. Mix well.
Choose your salad base: lettuce, spring mix, kale, or spinach.
Add the chicken mixture to the salad base.
Top with chopped parlsley
Serve immediately or chill for later. Enjoy!
