You can use canned chicken for convenience, but I prefer the richer flavor of rotisserie chicken. Be sure to chop the rotisserie chicken well to ensure a balanced flavor in every bite. This versatile salad can be enjoyed on its own, as a sandwich filling, or paired with crackers for a delightful snack.

Ingredients

  • 1 can of chicken, drained (or use cold cooked chicken breast, rotisserie chicken, or leftover turkey)

  • 1 apple, cored and cut into pieces

  • 1/2 cup dried cranberries

  • 1/2 cup of mayonnaise

  • 1/4 cup pecans, chopped

  • 1/2 cup celery chopped

  • 1/4 cup green onion, chopped

  • 1 teaspoon Dijon mustard

  • 1 teaspoon brown sugar

  • 1/2 teaspoon garlic powder

  • Salad mix options: lettuce, spring mix, kale, or spinach

  • 1/2 cup curly parsley, chopped

Directions

  • In a large bowl, mix the drained  chopped chicken with mayonnaise, Dijon mustard, and brown sugar.

  • Add the apple pieces, dried cranberries, chopped pecans, parsley, and green onion. Mix well.

  • Choose your salad base: lettuce, spring mix, kale, or spinach.

  • Add the chicken mixture to the salad base.

  • Top with chopped parlsley

  • Serve immediately or chill for later. Enjoy!
