This Tuna Salad is a refreshing and healthy dish packed with a variety of delicious ingredients! It starts with a creamy blend of tuna, mayonnaise, Dijon mustard, and sweet pickle relish, mixed with the crunch of finely chopped celery and the zesty flavors of green onions, parsley, and fresh mint leaves. The addition of sliced hard-boiled eggs, creamy avocado, and crisp cucumber adds layers of texture and taste, while a sprinkle of paprika provides a hint of warmth. Topped with shredded cheddar cheese and crunchy croutons (gluten-free, if you prefer), this salad is perfect over a base of lettuce, spring mix, kale, or spinach for a nutritious and satisfying meal that’s full of flavor and goodness!

Ingredients

  • 1 can of tuna, drained

  • 1/2 cup mayonnaise

  • 1 teaspoon of Dijon mustard

  • 1  small green onion, chopped

  • 1/2 cup parsley, chopped

  • 1/2 cup mint leaves, chopped

  • 1/2 cup celery, finelly chopped

  • 1 teaspoon paprika

  • 2 hard-boiled eggs, peeled and  sliced

  • 1 avocado, peeled and cut into pieces

  • 1 cucumber, peeled and sliced

  • 1/4 cup of shredded hard cheddar for topping

  • Half cup of croutons. Gluten free if you prefer.

  • 1/4 cup of sweet pickle relish

Directions

  • In a large bowl, mix the drained tuna with the mayonnaise, pickle relish and Dijon mustard.

  • Add the chopped green onions, parsley,  mint leaves, celery, and paprika. Mix well.

  • Choose your salad base: lettuce, spring mix, kale, or spinach.

  • Add the tuna mixture to the salad base.

  • Top with sliced hard-boiled egg, avocado pieces, cucumber slices, croutons and shredded cheddar.

  • Serve immediately or chill for later. Enjoy!
