Ingredients

  • 2 cups shredded cabbage

  • 2 cups of your chosen salad base (kale, romaine lettuce or spinach)

  • 1 cup shredded carrots

  • 1 cup edamame

  • 1/2 cup red bell pepper, sliced

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup chopped green or red onions

  • 1/4 cup chopped peanuts

  • 1/4 cup creamy peanut butter

  • 1/4 cup heavy whipping cream

     

  • 2 tablespoons soy sauce

  • 1 tablespoon honey

  • 1 tablespoon rice vinegar

  • 1/4 cup  of sesame oil

  • 1 clove garlic, minced (optional)

  • 1 cucumber pealed and cut up

  • 1 teaspoon of lemon juice

  • 1 tablespoon shaved fresh ginger

  • 1 tablespoon sesame seeds for topping

Directions

  • In a large bowl, combine the shredded cabbage, your salad base, shredded carrots, edamame, red bell pepper, cilantro, green onions, and chopped peanuts.

  • In a small bowl, whisk together the peanut butter, soy sauce, lemon juice, honey, rice vinegar, sesame oil, and heavy whipping cream until smooth. Add minced garlic if using.

  • Drizzle the peanut dressing over the salad.

  • Toss well to combine.

  • Top with shaved ginger, cilantro and sesame seeds.
