Ingredients
2 cups shredded cabbage
2 cups of your chosen salad base (kale, romaine lettuce or spinach)
1 cup shredded carrots
1 cup edamame
1/2 cup red bell pepper, sliced
1/4 cup chopped fresh cilantro
1/4 cup chopped green or red onions
1/4 cup chopped peanuts
1/4 cup creamy peanut butter
1/4 cup heavy whipping cream
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1/4 cup of sesame oil
1 clove garlic, minced (optional)
1 cucumber pealed and cut up
1 teaspoon of lemon juice
1 tablespoon shaved fresh ginger
1 tablespoon sesame seeds for topping
Directions
In a large bowl, combine the shredded cabbage, your salad base, shredded carrots, edamame, red bell pepper, cilantro, green onions, and chopped peanuts.
In a small bowl, whisk together the peanut butter, soy sauce, lemon juice, honey, rice vinegar, sesame oil, and heavy whipping cream until smooth. Add minced garlic if using.
