This hearty Cobb Salad features tender chicken breast, creamy avocado, crispy bacon, hard-boiled eggs, and fresh tomatoes all tossed in a bed of your choice of greens, and topped with crumbled blue cheese. Perfectly paired with blue cheese dressing, this salad is a satisfying meal on its own.

Ingredients

  • 2 chicken breast, cooked and chopped (or use canned chicken, rotisserie chicken, or leftover turkey)

  • 4 hard-boiled eggs, peeled and chopped

  • 2 avocadoes, peeled and chopped

  • 1 cup bacon, cooked and chopped (or use soft bacon bits)

  • 2 tomatoes, chopped or 1/2 cup cherry tomatoes, halved

  • 1 cucumber peeled and chopped in slices

  • 1/2 cup of croutons (gluten free if preferred)

  • Blue cheese dressing to your taste

  • 1/3 cup of sharp cheddar for topping

  • 1/3 cup of crumbled blue cheese

Directions

  •  In a large bowl, choose your salad base: romaine, lettuce, spring mix, kale, or spinach.

  • Add the chopped hard-boiled eggs, avocado, bacon, tomatoes, and cucumber . Mix well.

  • Add the chicken to the salad base.

  • Top with blue cheese dressing   crumbled blue cheese, croutons and cheddar.

  • Serve immediately or chill for later. Enjoy!
