Ingredients

  • 2 cups mixed spring greens (or you can choose any greens of your choice such  as arugula, spinach, or kale)

  • 2 cooked salmon medium steaks, flaked (grilled, baked, or poached)

  • 1 avocado, peeled and sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup toasted pine nuts

  • 1 cup extra-virgin olive oil

  • 3 tablespoons lemon juice

  • 2 teaspoons Dijon mustard

  • Salt and pepper to taste

Directions

  • In a large bowl, combine the mixed greens, flaked salmon, avocado slices, cherry tomatoes, red onion, cucumber, and toasted pine nuts.
